A Fast Smash version of Spanish rice.
Ingredients
Directions
- Heat olive oil in skillet.
- Add onions, peppers and garlic.
- When vegetables are soft add one cup water and can of tomato paste.
- Add chili powder and cumin.
- Stir in the cooked rice and drained and rinsed kidney beans.
- Simmer 5 to 10 minutes.

My husband loved this. It's really a complete meal all in one skillet. Very filling. I also added fresh tomatoes.
