Ingredients
Directions
- In a large pot, spray with non stick spray. Sauté garlic, eggplant and mushrooms over medium heat until tender.
- Add stewed tomatoes, water and seasonings. Bring to boil.
- Turn down heat and simmer uncovered for 20 to 30 minutes until desired consistency.
- Enjoy by itself or over brown rice or cooked spaghetti squash.
- Note: great for Fat Smash Phase 1.

This was absolutely amazing!! I added a little vegetable stock to make it a bit more soupy. My finicky 5yr old even liked it! I will definitely make this one often. It doesn't even need salt.

This is my back-up meal. It's always in the fridge. Reheats well. I put it in the slow cooker, and I like the consistency better that way.
