Directions
- Mix eggplant with salt and let stand for 1 hour. Rinse well and dry.
- Sauté eggplant in oil in small batches. Mash eggplant with a potato masher.
- Sauté onions until golden and add to eggplant.
- Beat eggs with other ingredients. Add to eggplant mixture.
- Pour into oiled 9" baking pan and bake for 30 minutes at 375 °F (190 °C).
