Egg and Sausage Muffins

The no excuse breakfast! These faux muffins are worthy of serving to guests.



  1. Preheat oven to 350 °F (175 °C). Spray muffin tin with cooking spray like Pam (can also use mini bundt muffin pan).
  2. Spoon cooked sausage in to the tin, filling 1/2 way.
  3. Mix eggs, cream and other additions (optional: cheese, salsa, bacon, onion - be creative) together and spoon on top of the sausage until almost full.
  4. Bake for about 20 minutes, until eggs are done and slightly golden.
  5. Remove from oven and let sit for a couple minutes. Gently use a spoon to remove the "muffin like" creations.

Excellent!! I added mushrooms, spinach and onions and baked it in loaf pans. Amazing!

I made these WONDERFUL MUFFINS ..Loved having them made and ready.. my pans are cupcake size and it make 18 the first time I used sausage,bit of onion and g pepper.. and just a pinch of cheese in each hole..OK BUT I DON'T LOVE SAUSAGE... Yesterday I made them with 1# cheap ground beef.. put it in the skillet with onion and g pepper and let all the liquid cook off till it started browning.. drained that well in my wire mesh strainer.. filled my tins, PUT IN A TSP OF FLAXSEED MEAL,....FOR FIBER...... Mixed the eggs, 1/2 cup parmesian cheese, 1/2 cup grated cheese, the cream and garlic and herb seasoning. Blended good and filled the holes..topped with a sprinkle of real bacon bits. it did not run over in the oven.. I sprayed the tins well, they cooked for 27 min in my oven.. come out perfect THANK YOU SO MUCH FOR THIS RECIPE... I LOVE IT...

This is really good. I also used 10 eggs instead of 12 and added some spicy peppers, onions, and cheddar cheese. Very good~ ^______^

I made this this morning and was GREAT! It needed alittle more flavor but nothing some garlic powder and what not couldnt take care of! I had to leave them in there for about 30 minutes though. I put the rest in the fridge for the rest of the week.
Carb-wise it'd be fine; however, fat-wise, not so good. Nearly 16g--that is almost 1/3 of the the daily intake. Sodium is a bit high as well. Hope those of you who can/do eat them will enjoy a bite or two for me as well. :)

I would give this a 5 star rating, but I don't like egg very much and first thing in the morning it is hard to get down. Having said that I do eat it often because it is easy to make, convenient to freeze and grab each morning and it is good enough for some one who doesn't like egg too much to eat. I use sliced ham instead of sausage, FF half and half and southwestern Egg Beaters.

Do you think that you could make them individually? i.e. since it calls for 12 eggs and maked 12 servings ... you could reduce the ingredients to make it a little lighter in fat/calories?

I like this because not only would it be yummy but my kids'd love it too - especially if I used a mini muffin tray!... Two birds with one stone! lol
