Chili Con Carne with Red Beans
Rich and heart healthy chili con carne with lean ground beef that's suitable for all meals.
Ingredients
Directions
- In a large pot with a heavy bottom, brown the 95% lean ground beef, remove from pan and set aside on paper towels to drain.
- Add olive oil to the pan, then add all vegetables, except the canned tomatoes, sweat until crisp tender.
- Add seasonings, stir and add wine, cook for two minutes, add the remaining ingredients and bring to a simmer.
- Let cook over low heat for at least an hour, or until the vegetables are fully softened.
- Adjust seasonings to taste.
