Chickpeas Corn and Red Pepper Salad
Delicious and healthy salad with a lovely texture suitable for all meals.
Ingredients
Directions
- Place rinsed corn and chickpeas in a bowl.
- Add red pepper and onion diced finely.
- Add coriander, salt, pepper, vinegar and olive oil. Toss well.
- Note: optional to include canned 3 bean mix or parsley.
