Cheesy Chicken Enchiladas
Delicious chicken enchiladas with tortillas, sour cream and melted cheese.
Ingredients
Directions
- Combine chicken, cream of chicken soup, sour cream, butter, onion and 1 1/2 cups of cheese in a pan.
- Cook until warm. Warm tortillas and then dip tortillas in enchiladas sauce to soften.
- Spoon about 1/2 cup chicken mixture in each tortilla.
- Roll up and place close together in 2 greased 9x13" pans (5 in each).
- Cover with remaining shredded cheese.
- Bake uncovered at 350 °F (175 °C) for 20 to 30 minutes.

Made it for dinner tonight and EVERYONE just couldn't stop talking about how good it came out! I used more chicken breast because 6 oz for 10 tortillas was definitely not enough and used whole wheat tortillas instead...this was GREAT :)!!!

made this for dinner tonight it was very good but i do have to agree with gburgos1113 not enough chicken i only did do the 6 oz next time i will put more. i used regular tortillas next time im going to use the whole wheat. and im going to cut back on the butter i think it was just way to much. but it was very good i will make it again everyone liked it a lot. i will also be passing on the recipe to my family and friends! thank you

Made this for dinner tonight. They were good but I would cut down on the onions....it was a bit too much. Also, definitely doesn't need as much butter. And like gburgos and sweetlove said, 6 oz of chicken is not enough for 10 tortillas, I would probably double the amount of chicken. I'm also not sure that the calories are correct. The recipe doesn't specify the size of tortilla so maybe that makes a difference. I used 10 inch tortillas. I also used plain yogurt instead of sour cream and low calorie butter substitute. The directions say to dip the tortillas in enchilada sauce but enchilada sauce is not in the list of ingredients so that adds calories too. With my lower calorie substitutions (yogurt and low cal butter) using 10 inch flour tortillas and double the amount of chicken, mine came out to 353 calories each (making 12 enchiladas instead of 10). I put 1/2 cup of the mixture in each tortilla.

After reading the comments we added more chicken and used half the butter, but we added green peppers. We did not dip the tortilla in the sauce, but we did pour the rest on top. We loved this!
