Cheddar Ale Soup

This cheesy ale soup is hearty and delicious.



  1. Sauté onion in olive oil 3 minutes. Reduce to medium heat and add carrots and celery.
  2. Sauté 5-7 minutes further. Sprinkle in all purpose flour. Stir.
  3. Add broth, milk and beer (may use pale ale). Cook 5-7 minutes or until foam disappears and soup thickens.
  4. Stir in cheddar cheese and simmer 15-20 minutes.
  5. Serve with toasted bread and a garnish of more cheddar if desired.

I love cheddar soup--you could easily add or substitute in brocolli!!! I believe this could become a staple!!! Thanks for submitting it.
