Cantaloupe & Prosciutto Salad

A nice, sweet-salty-herbal flavor salad that is so refreshing and perfect for summer.

Ingredients

Directions

  1. Combine melon with pepper, fresh mint and lemon juice.
  2. Arrange prosciutto evenly over melon mixture.
  3. Sprinkle with goat cheese.
  4. Garnish with fresh mint sprigs and cracked pepper.
  5. Note: instead of goat cheese try parmigiano-reggiano cheese or asiago cheese.
