Banana Cranberry Walnut Muffins

A great blend of fruit and nuts combine to make these muffins extra special.

  1. Pre-heat oven to 350 °F (175 °C).
  2. Mix sugar and butter, then add egg and beat together.
  3. Add flour, baking soda, salt, baking powder and mix.
  4. Mix in mashed banana (old bananas work best), cranberries and nuts.
  5. Put lumpy and sticky dough into 16 muffin cups and bake for 25-27 minutes until toothpick inserted comes out clean.

I tweaked quite a bit of this recipe. Instead of sugar I used fructose and instead of a full cup I used 3/4 cup. Then added 1/4 of light agave nectar. Instead of butter I added 1/4 cup of organic apple sauce. I followed the rest of the recipe and put the muffins in the pan. I used a tbsp of butter with small amt of brown sugar and rolled oats and mixed together and sprinkled each muffin with this topping. Then baked. Oh I forgot that I added a handful (or two) of flax seeds to the mix. The muffins were great!!
