Banana Cranberry Walnut Muffins
A great blend of fruit and nuts combine to make these muffins extra special.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Mix sugar and butter, then add egg and beat together.
- Add flour, baking soda, salt, baking powder and mix.
- Mix in mashed banana (old bananas work best), cranberries and nuts.
- Put lumpy and sticky dough into 16 muffin cups and bake for 25-27 minutes until toothpick inserted comes out clean.

I tweaked quite a bit of this recipe. Instead of sugar I used fructose and instead of a full cup I used 3/4 cup. Then added 1/4 of light agave nectar. Instead of butter I added 1/4 cup of organic apple sauce. I followed the rest of the recipe and put the muffins in the pan. I used a tbsp of butter with small amt of brown sugar and rolled oats and mixed together and sprinkled each muffin with this topping. Then baked. Oh I forgot that I added a handful (or two) of flax seeds to the mix. The muffins were great!!
