Well I was a little nervous to check how much I weighed after the weekend. I was good about keeping the calories down but I was eating later then I like for dinner. Not a big loss in the last couple days but something is better than nothing.

For my workouts I have been doing either a Jillian Michaels 30 minute work out tape or spending 30 minutes on the elliptical on alternating days. I wonder if I should try to increase the amount of time I spend on the elliptical.

For dinner last night I made "empanadas," well my own version. I browned some ground beef with sweet red and yellow peppers with salt, pepper, cumin, red pepper flakes, garlic powder and this spicy rum sauce I had in my fridge. I rolled out a grands biscuit and put in a 1/4 cup of filling. Folded over, sealed the edges with a fork and baked! So good! I ate one for dinner and one for lunch today! (My husband ate 3 for dinner, I was so jealous, not that I wanted to eat 3, but 1.5 and 2 would have been nice and filling :-)
