I have a few actually. You can incorporate some sauteed squash or zucchini into the meat sauce layer. Use 1% cottage cheese instead of ricotta. You could even slice some zucchini the thickness of the noodles and use in place of one layer of noodles. Heck, you could puree just about any vegetable and add it to the meat sauce.

The aspect that's hard to get around is that oo-eee goo-eee cheese topping. I suggest using a small amount of good parmigiano regiano or Pecorino. I find Pecorino melts nicer and has more flavour.
