Weight gain
I know when I gain weight from fluid I don't pay attention to it cause that's easy to lose versus gaining & it's not water weight. Also, I know from experience if you go too far under your calorie goal too many days you can gain weight a few days later (so if I am too under my calorie goal Monday, Tuesday & Wednesday then by Saturday I'll see a weight gain), my doctor says that's very normal & you usually see the weight change (good or bad)a couple of days later.
I am 48 years old & 355/lbs, I've lost weight a lot quicker when I was younger but gained almost everything back, now I'm losing very slow but I'm keeping it off. So don't get discouraged you can do it & at our age it's going to be slower but I wouldn't worry about water weight.

You can do this - I too have gone the opposite way & I picked myself up and am doing better, although not perfect by any means but getting there. Good luck, we'll do it together!!
