Beef and Vegetable Meat Loaf

Vegetables give moisture and extra flavour to this variation.

Ingredients

Directions

  1. spray 9 x 5" loaf pan with non-stick cooking spray.
  2. In a large bowl combine beef, rolled oats, mushrooms, carrots, red pepper, onion and parsley. Mix well.
  3. In a second bowl stir together tomato paste, water, egg, mustard, pepper and chili powder.
  4. Lightly combine with meat mixture just until mixed.
  5. Turn into prepared pan. Bake in 190 °C oven for 50 minutes or until firm to the touch.
  6. Pour off any fat and let stand for 5 minutes. Cut into 5 slices.
