Pastel de Zanahoria

Es un pastel de avena y de zanahoria que al no llevar harina de trigo es mucho más fácil de digerir.

  1. Precalentar el horno a 200 ºC. Se pelan y rallan las zanahorias, si te da flojera puedes ponerlas enteras en la licuadora con los gajos de naranja sin semillas, las ciruelas sin semilla, la leche, el aceite, el azúcar y los huevos y que se licúen.
  2. Se agregan el polvo para hornear, la sal y el bicarbonato de sodio y la mitad de la harina de avena y se da otra licuada.
  3. En un bol se agrega la mezcla y lo que falta de harina de avena y la taza de hojuelas de avena.
  4. En un molde previamente engrasado (de preferencia en forma de rosca) se vacía la mezcla y se hornea 15 min a 200 ºC luego se baja el horno a 150 ºC y se hornea por 30 min más.
  5. Se inserta un palillo largo y si sale casi seco el pastel está listo para salir del horno. Dejar enfriar, desmoldar y servir.
