I think this is going to get harder once the school year ends and I have to cut up my own vegetables for salads at lunchtime. Oh, the life of a teacher!
188.0 lb Lost so far: 40.0 lb.    Still to go: 52.0 lb.    Diet followed reasonably well.

Just cut up a bunch all at once for the whole week, maybe get some of those "green" bags that keeps your veggies fresher for a longer period of time.

Yes! I cut up my veggies and throw them in tupperware. Every morning, I throw some in a pan with my scrambled egg whites! It's great and easy!
