I haven't logged in a few days due to some technical difficulties (killed my phone and iPad charger died) and also because I forgot to one day here at the office! I'll be back on it today though, phone and iPad are fixed and talking again.
I absolutely love this time of the year, not because of the holidays, but because a LOT of the meats that I started curing in the Spring are now getting ready to eat! Twice a year myself, my boys (if they come to town for it), and a few close friends get together to grind and process around 100-200# of meat into cured meats or sausages of one flavor or another. Most of the folks only want sausages to cook/smoke/freeze, but since I have a curing setup, I tend to make a few to hang out in the chamber for several months to a year. The flavor of homemade is so much better than you buy in a store.
Last night I made up a plate with regular summer sausage, jalapeno cheese sausage, and a black pepper salami. Also threw in some cheese and natural old style mustard. Very low carb, and great protein!
