I made a stellar dinner last night: deep fried shrimp in a potato starch crust (potato starch acts just like corn starch, but it's keto friendly with lots of fiber, so low net carbs), an artichoke, and a sliced tomato with tarragon mayonnaise. SO good, and I ate every bit of it. The artichoke is a little carby, and pricey to boot, but as a once-in-a-while treat, SO worth it!
Some may remember me referring to a co-worker who tells me I'm getting too skinny, while she herself is morbidly obese...I learned yesterday that she's hospitalized with gallstones and pancreatitis, and will have surgery for the gallstones on Monday. There is a chance that the pancreatitis is actually cancer. :( I'm concerned for her, but I do hope that this serves as a wake up call for her. She's addicted to sugar, and won't even try to break the addiction. I know it's hard. Evidenced by my own wheat struggles, I have every sympathy. But I try, and mostly succeed, to keep it under control. Latest studies have shown that sugar feeds cancer, so maybe this scare will be the thing that pushes her to try to control that beast.

That's really sad. I, too, hope she learns from this, but I hope she does not have cancer.

Because they were doing store resets in a local grocery chain here a year ago, I bought about 25 bags of Bob's Red Mill Potato Starch. I used to mix a tablespoon or two of it in water and drink it for the resistant starch properties. I had read though the properties of it only were good if the starch was not heated. I haven't been taking it since starting keto, because I haven't read much about the keto-friendliness of it (because most say no for anything potato on keto). Have you heated/fried it before, and if so, have you notice any problems with it stalling you or making you gain?

MsKes: Sorry to hear about your co-worker. I hope this is a wake up call for her. Sugar feeds cancer and is so bad for us in other ways, too. Erika: I have some potato starch, but your question is mine. Resistant starch is supposed to be good, but... I also wonder how to use it without adding it to something that needs to be cooked.

Wish your,co worker the best and do not wish cancer on anyone. But I find her remarks to you stem from jealousy. But in either case best wishes to health and future recovery.

I hope everything is okay with your co-worker. I recently had a scare and thought it might be gallstones or even pancreatitis (my doctor told me he thought it was something else but ran tests for the pancreas) but all tests came back normal. Hopefully her surgery will go okay and they won't find any cancer. Even though we know we need to lose weight, it's the individual that has to get the motivation and determination to actually do it. Can't begin to count how many diets I started on Monday that ended on Monday night. Maybe this be her motivation and she'll be lucky to have you supporting her. Sometimes people say "you're too skinny" and actually mean it as a compliment.

Some people might be best off living in the sugar blur and going through the health consequences, given larger contexts of their lives. Or maybe I'm just overly cynical and sad about the food industry today. I hope the best for you and your neighbor, and for everybody everywhere. Whatever form that takes.

Thanks, y'all. Keep my friend in your prayers/thoughts as she undergoes surgery today. @Erika, I don't know about the raw vs. cooked potato starch thing, but as of now, it seems to have jump started losing again. I did chicken wings with it last night, and as of this morning, I'm down another half pound with good appetite and strong ketosis.

Keep up all of your good work. You are not getting too skinny, just gaining a healthier life and the slimming is evidence of that. You know balance is important.
