Made my substitute for Mexican food tonight. If anyone's interested in the recipe, let me know. It's delicious. You bake potatoes (I use sweet potatoes) and scoop out the flesh. Then in a skillet you brown up chicken chorizo and mix it with sour cream, then mix that with the potatoes and shredded cheese, restuff the potatoes and put them back in the oven for about 15 minutes. You serve them with the accompaniments for tacos -- chopped tomato, chopped green onion, sliced avocado, salsa. This is not low calorie -- but much lower in calories and carbs than a typical Mexican dinner, plus you can use lactose free dairy, and using sweet potatoes instead of tortillas avoids wheat and/or corn. And we made green beans to go with this, so no rice or beans either. It's really a delicious treat. I do miss Mexican food a lot, but I imagine it would make me quite ill, so these potato tacos are the closest I've gotten to Mexican in more than a year. I shouldn't complain -- this dish is quite tasty!

Fajitas are my go to menu choice when we go out for Mexican food. Just no rice or tortillas. So delish!!

I did that last night. Steak fajita n veggies from our Mexican produce store with no tortilla. There was some at the buffet I went to today and I just grabbed some meat and veggies again :-)

I have made chicken fajitas with the chicken strips already seasoned and cooked and added sauteed the green peppers and onions ... added in mozzarella cheese and melted it through! I don't really like tortillas, so I just ate mine on a plate like it was. I put hubby's on a hoagie bun. Hermeiones Mom ... do you eat the potato skin? I can't imagine the sweet potato with the sour cream. I never thought to mix it all up with the sausage etc. Great idea!

Mom -- my housemates prefer regular potatoes to sweet potatoes for this dish, but I just loved it with sweet potatoes, and I don't eat white potatoes except on very special occasions. I have a recipe I'll dig out to send you that is nachos made with sweet potato wedges instead of tortilla chips. They were really good too.
