Everything sounds delicious, nothing beats fresh prepared. My wife loves fast food, but I refuse to eat it with her, she's got a fortunate metabolism and I do not. I wouldn't trade my way of eating for anything, even if I could make junk food and candy have the same effect on my body as the high fat low carb foods I currently indulge in, I wouldn't trade because I prefer the foods I eat.

Phil, exactly! I never look at it as "I can't have this," but more as "I choose NOT to eat this." Makes me feel powerful! And I also make sure that everything I prepare is really appetizing, equally so in appearance. I'm hoping that I'll get my husband and daughter to want 'my' food more and more :)

I ignore her fast food when I'm working on a plate of home made hot wings and guacamole. :D She typically ends up coveting my plate and of course I share. What I think is hilarious though, is that she's critical of EVERYTHING she eats, so I really don't want her wanting my food. lol I've tried to get her to plan her meals the way I plan mine and she doesn't want to hear it or talk about it. I'm honestly left wondering about half the time if she's even enjoying what she eats then I remind myself that's her problem, not mine and certainly not my problem to fix. lol

My husband and Teen are just total carbheads. So they're mostly not interested in what I eat, but it's not going to stop me! I used to push harder because they both, like me, have a lot of diabetes in their family backgrounds (daughter is adopted) and I'd love to help them hold it off. But I can't do it for them; all I can do is take good care of me, make the best for them that I CAN get them to eat, and be prepared to help them if diabetes strikes. But you are SO right: planning is everything!

SjF....I've been the head cook at a summer camp for twenty years, and I make everything fresh from scratch there, too, lots of fruits and veggies. Those kids eat as well as I can get them to! so planning just for me is a, pardon the pun, piece of cake!

I came to read your journal at the wrong time of the night. Everything sounds so good. I can eat salad daily but I've fallen behind with the veggies so prepping a big batch will help. Lucky camp kids, it's great to know someone mindful is prepping their food. Awesome!

Chica, it really does help! I usually do an entire bunch of celery, a bag of carrots, and a package of zucchini. If I have them, I also do cucumbers and red peppers. If you line the salad bowl and the storage containers for the veggie sticks with paper towels, they absorb the moisture and keep everything fresh and crisp much much longer. These will last me through the week :) And I do love feeding my camp kids--I hide all kinds of things in their food, in addition to the stuff they knowingly eat (oatmeal in the chocolate cake, pumpkin and beets in the chili and spaghetti sauce....)

That's so cool for the kids. I'll buy my groceries tomorrow so the salad prep can begin. I need veggies back in my life.
