Ok, I really need to quit eating so much processed meat. I don't like to cook, so I always lean towards things in boxes, or processed foods. I did pretty good for a bit, then got back off the track of cooking "real" foods.
I am going to browse through the recipes to if any thing sounds yummy with out alot of prep time. Hopefully I get get cooking next week. Hope all is well for all of you!

i cook for only one so it is hard for me too! but what i found is i will get a whole tray of chicken breast lay them out on a cookie sheet and bake them all at once using diferent seasonings on each then when they cool i throw them in the freezer so all i have to do is pull out one and some frozen vegies and i can microwave dinner in about 6 min. or less! so easy and much better! and you can change it up a bit by throwing cheese or rague alfredo sauce on it! alfreado sauce only has 2 carbs per 1/4 cup serving and when mixed with the chicken and vegies it is really good! with not skill or thought required! it is hard some times to cook for all of us!

Good idea, restless! I was going to suggest cooking twice a week. I used to do Sunday and Wednesday. I just cooked enough for the next 3 or 4 days and all I had to do was warm it up. I prefered to keep mine in containers in the fridge so I didn't have to even worry about defrosting them. :)

Great idea, Laura. We do the same when we cook meat we always cook extra and keep it for a fast snack!

What a fantastic idea! Oh my, I would have never thought to cook them all at once, and season them differently. You wouldn't believe how much chicken I threw out last week, My husband would have killed me! But it was a super large pack from sam's club, and only cooked from it once. Jeremy didn't know because he is gone all week. So now I will go get another, and cook them up like a made woman!
