i replace the soy sauce with peanut butter and coconut milk (soy sauce is not gluten free but i think you can find gluten free soy sauce although i haven't seen it). i make the sauce with 1 part peanut butter, 2 parts coconut milk, grated ginger, garlic, diced thai hot pepper. if you want a lower fat version, a citrus ginger sauce would be yummy! i would do 3 parts citrus juice, some citrus zest, grated ginger, touch of honey, chili pepper flakes. hope that helps!

Sounds like veggies don't agree with you. You picked a good name for yourself. Have you tried V8 juice? Maybe you'll have to stick to fruit.

smallboned...thanks...i have to treat soy like i am allergic to it...it throws my hormones into another galaxy if i have it...i always have the coconut milk around...i will try this...thanks...

You can season your stir fry's with other things besides soy sauce. One of my favorites sounds awful but taste good... its got a little chicken broth, garlic, ginger and oyster sauce (its in a bottle in the Asian food isle). It's very tasty but dont make the mistake of trying to taste it directly from the bottle...its gross that way!

Kale chips: 1 bunch kale (10oz) rinsed & dried well, nonstick cooking spray, Kosher salt. Oven 350. Discard thick stems and tear leaves into large pieces. Spread leaves in single layer on cookie sheets. Spray w/PAM. Sprinkle 1/2 tsp kosher salt. Bake 12-15 min or until crisp (but not brown). Cool on wire racks. Good luck

how about butter, pinto, navy, black, or kidney beans? sweetpotato (i bake them in the microwave and add splenda/cinnamon)? collard greens? cauliflower made like mashed potatoes w/cheese? brussel sprouts?

kellybo...thanks...i like beans so i will try these...i have done the cauliflower mashed - my taste buds revolted...lol...the stomach never even got a chance to see if it liked them...i have been told to mix them with a regular potatoe like i did the parsnips...i will try that also...

I haven't tried it, but what about the new V8 fusion? It's supposed to have both veggies and fruits, but the taste is more of the fruit according to the commercials. Just a thought....

V8 scares me, I just can't help associating it with clamato :P Too much salt for my liking too. I wish I had a juicer, that would be sweet........How did the stir fry go? Did you get a chance to make it? I'm hoping to get a recipe for the sauce worked out, usually I do whatever but it'd be good to have it in the cookbook!

I still think a lot of what taste bad in veggies is how they are prepared/cooked. You might want to try a recipe that is in my cookbook.. you can go get it from my cookbook for the vegetable medley casserole. I've served it to company and everyone has liked it.. in your case, up the amount of low fat cheese. My grandson will eat just about any veggie if you put lots of cheese on it.

I agree about the sweet potatoes those are great and you can bake them and make "fries" out of them. There's a lot of recipes for them on here and online too.

A nice multi-bean salad seems like just the thing, and you might try a cole slaw... Great summer foods!

thanks all...i have printed these out and will try them during the next week...last night i did steamed brocolli...i ate the entire side dish...the bartender did a double take when i ordered it and then laughed out loud when i actually ate it...friday nights are our date nights so they know us pretty well...
