Spinach and Chicken Manicotti

A wonderful combination of pasta, ricotta and marble cheese, tender chicken breast and leafy spinach covered with a perfect tomato sauce.

Ingredients

Directions

  1. Boil the manicotti pasta in water for about 6 minutes.
  2. Meanwhile, mix together the ricotta cheese, spinach, chicken and spices to taste (add chili powder too if you like).
  3. Drain the pasta carefully and as soon as you can handle touching them, lay out on the counter to avoid crushing and getting stuck together.
  4. Holding the noodles with your finger blocking one end and cupping the rest, gently stuff them with the spinach mixture with a fork.
  5. Place them in rows in a greased pan (Pam works great). Cover with spaghetti sauce.
  6. Add 1/2 cup water to baking dish and cover with tinfoil (this will let the pasta absorb the additional moisture.)
  7. Bake at 350 °F (175 °C) for 25 minutes and remove the cover.
  8. Sprinkle with cheese of your choice and bake until almost all additional moisture is gone and the cheese is nice and gooey. Serve with a side of salad or steamed vegetables.

Can't wait to give this a try tonight...it looks awesomely delicious!! I can't get the manicotti shells at my small town grocery store, but I'm betting this will be as good stuffed into the large pasta shells also :)

I used 2% cheese and a healthier sauce, glad there was leftovers. Quick, easy, and very tasty. Thanks for the recipe!

This was very nice, I will use less water next time. I used 1/2 cup ricotta but I think it needed more. The spinach was quite overpowering. I think also 3 Tbsp of pepper is too much. I used 2 tsp and it was fine. Did not make an extra vegetable as we had the spinach in the dish. I made 10 noodles and 2 per person was more than enough. I didn't understand the 2 oz of manicotti. That is only 3 manicotti and you cannot split that into 10 servings as recipe said. I figured 2 per person, so that is 5 servings. With editing, this dish is nice.

We enjoyed this recipe very much, the only thing I didn't like was the liquid left over in the bottom, if you cooked the pasta a little longer and then didn't add the water do you think it would still turn out?

So, so good! Next time I make them I'm going to double the ricotta (I use fat free) add mushrooms and dice the chicken smaller. I was only able to stuff 9 manicotta, hopefully adding a bit more will let me spread the recipe further.

GREAT recipe. I used 8 oz. manicotti 12 shells). Added 1 cup mushrooms and total 1 cup ricotta. Yummy Yummy. My husband gave it a "thumbs up". I est. total calories per shell = 160 with changes.
