Lemon Zucchini Bread

A wonderful, light zucchini bread that's not too sweet.

Ingredients

Directions

  1. Pre-heat the oven to 325° F (165° C). Grease an 8x4 inch loaf pan.
  2. In a bowl, beat together the zucchini, sugar, egg, and oil.
  3. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest.
  4. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan.
  5. Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean.
  6. Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely.

Like most baking recipes, I cut the salt in half with no ill effect. Also, nearly everyone who has been on DASH for at least 2 weeks says everything has more flavor.

This is the very first zucchini bread I bake and eat, and I gotta say it's great. I just added some water to the mix, and I used whole wheat flour with cereals in it. Yum!

I loved it, my picky kids love it. My husband said it didn't have much taste and it tasted fibery. but he is used to zuchini bread with lots of sugar.

I should have read the directions, I added 1/4 cup oil, and 1/4 cup of honey and it is really good, the lemon zest is a nice addition!!
