NOLA

I just commented in a journal and it looks like a discussion could follow. Since I do not want to take away the attention from the original post I am going to write about my thoughts in a separate recording.

Topic was a visit to New Orleans.
I went end of September, having in mind to start back recording lchf by 1 October. So, I enjoyed what variety of food NOLA has to offer - in moderation though. Eating 3 beignets is a full meal, no need to go for dinner *lol*

When in NOLA I have the tendency to walk a lot. There is so much to see. I love the balconies, love the whole atmosphere - of course outside of Bourbon Street (which is a must but once is enough). I also did a slow boat gator tour which was incredible. But now back to the issue I encountered.

Flights are stressful and even though I fall asleep as soon as I sit on a plane, it is not really restful. The days before the trip were filled with chores and the nights were short. So, here is the first issue, not enough sleep.

Being in New Orleans, as I said, I walk a lot. Normally very good for my legs and feet who have the tendency to swell when I sit a lot (due to my job).
This time it was a little different. Even though I walked a lot my legs started ballooning. That peaked on the flight back when I had only 4 hrs of sleep or so due to the fact that my flight was leaving early. The next day I was back on track with my carbs and the swelling vanished immediately.

Now the comment on the other post was that this was sodium related water retention. I do not fully agree with it.
Sodium might be a reason but only in combination with too many carbs. I cut out the carbs and the swelling went and stayed away.

Lchf is not a low sodium diet. I cook for myself and use a normal amount of salt. No issues with swelling etc. If I veer off the lifestyle, that's when I encounter problems.

We are all a little bit different, no one organism is the same. So we all might have issues where others are perfectly fine.

My issue with carbs was underlying, it took years to figure it out.

Way, way back I gave up eating eggs. A typical American breakfast with bacon, eggs and cheese, accompanied by a slice of toast or a biscuit (or a German breakfast with soft boiled eggs and toast) made the eggs staying in my stomach forever. Ergo, I cut out the eggs, and that for years.

When I considered a low carb lifestyle, back then it was Atkins, I was afraid to eat eggs. Everything else looked so good to me, like being made for me if it would not be for those eggs.

Nevertheless I gave it a try . As it turned out, not the eggs were the issue, I digest them just fine. No, it was the bread. I am not sure whether it is the wheat or just too many carbs but I know if I have a "normal" breakfast I have the same issue again (trial and error).

So, I found two issues so far that have one common denominator - carbs. Of course I draw my conclusion - keep the carbs low and it'll be fine!

Stress/frust eating....

I need another job! Am at my workplace for more than 10 years, the third manager, and it is not getting any better.

The relatively new boss (head of the department) is great, we have a very open and honest relationship. Now you'll say, why does she want to leave? Well, he is great! He has a very charming personality which leads you to take on any task he is asking for. I warned him a few times since it's not only I. He is causing burn outs.

I shut down my computer yesterday - enough is enough and went home, food on my mind. I was well aware that I was not hungry, even considered drinking water instead. But then there is the fridge, friend and enemy at the same time *lol*, filled with goodies. I had done my grocery shopping Thursday evening and since I go only every other week or so you can imagine it was filled well.

To make a long story short - I don't think I even maxed my carbs but my calories went through the roof. There was still some cake left over, a small piece counts for 250 kcal - I had two :-).
I will not log what I ate. Don't need any more stress seeing those numbers. I will continue logging and go back to where I was. Enjoying what I cooked and staying within the limits.

So, I started back on recording my meals - weighing and recording everything I eat.

I did not do too bad since I was last here but it is not the end of the road.
I was away for a few days, New Orleans, and with the food down there came a whole lot of issues.
I know it is possible to stay on track while traveling but I did not want to. Paid for it on the way back. The wrong food - too much sugar, not much sleep, and then two times a two hour flights... my legs looked like balloons.

I had planned to go back to recording my meals starting October 1st and so I did.

A little headache came on after 3 days (found some chicken soup in the freezer *lol*) but it was not bad. Now I am at a point that I struggle again - not to fall off but I am not hungry. Also, or maybe because it is weekend, I don't get enough fat. To have too many carbs does not worry me but being too high in proteins. I looked in the fridge again and again and did not feel like eating anything. Meat means proteins (as well).

During the week it is usually not a problem to stay 70/20/10. I plan my meals ahead and cook on weekends. I'm almost finished with my cooking spree for today. Chicken thighs, country style ribs and a cake (that one is for my granddaughter's birthday - yes, lchf). Comes in handy since one of the kids is gluten intolerant and obviously lchf does not have any. I paid attention to all the ingredients to ensure it.
I also baked some bread, let me see how this works out with the meal planning. So far I had not incorporated it.
Some cauliflower and asparagus are still waiting to be prepared. No time to do it tomorrow because of said birthday party :-)
