Good morning, FS buddies! It's Friday, the sun is shining, and I got the best night's sleep in a while. Right now, there's a blue jay, a yellow bellied sapsucker, a cardinal, and a ruby-throated hummingbird at the feeders. There are some beautiful yellow butterflies dancing by the lilies, and the vultures seem to have moved away. It's a good day to do good things!
Yesterday was a meat marathon. I tackled the 10 lb bag of chicken leg quarters. I removed the hip/back portion, boned out the thighs, and kept the drumsticks whole. The backs and thigh bones went in the stockpot, and I ended up with about a quart and a half of rich bone broth. My meal for the day was the meat I picked off the bones when the broth was finished.
I vacuum sealed the thighs and drumsticks in individual serving packs, and ended up with 22 portions. Not bad for under $7! I also packaged up some breakfast sausages and country style pork ribs. It's amazing how helpful a vacuum sealer is when you are cooking for one or two.
Work today will be long and busy, but then I have a 3 day weekend. One of my favorite clients is coming in today, the Thai lady who always brings me delicious treats.

Is the Thai lady the stereotypical 4'11" and only 90 pounds? Would be curious to know what her daily menu looks like, and how much of those sweet treats she eats in a month.

@Sss, Yes, and she's 70, but looks 50. LOL! And dresses impeccably! The treats she brings me are hardly ever sweet....not sure where you got that idea. She used to bring me homemade spring rolls, but once I told her about my WOE, she's brought me Tom Yum and Tom Ka Gai soups (each under 4 g carbs per serving), and some wonderful ham and cheese roll-ups in blanched cabbage leaves. Today's treat was a Sichuan Chili Ma La Sauce. Net carbs per serving, 1. She loves to cook, like I do, and much of our conversation revolves around recipes. Her husband is of Hungarian extraction, and loves Italian food, so she cooks, and eats, a wide variety of foods.

"Treats" in my vocabulary means "chocolate.". How wonderful that you get exposed to real Thai home cooking. And Hungarian, too, though their stuff is heavier.
