Have several deadlines + a new job starting this week, so to offset some of the stress I took time to meal prep today! I have suppers until Friday, and some flexibility for breakfast and lunch. I'm trying to use up the last bits in my fridge and freezer before the month end shop, and I'm happy with the simple meals.
- 2 x chicken a la king with basmati, loads of green pepper and mushrooms to bulk up the sauce - 1 x spaggy bol with hidden carrots - 2 x savoury mince with mixed veg: one with couscous, one for savoury crepes with cheese sauce as a Friday treat.
It feels good to be so prepared!
