Breakfast for dinner, no sense in breaking Tuesday night tradition even though we didn't have class. I put the eggs on the small tortilla and had the whites and the beans on the side. Sadly, I don't have salsa on hand, but I do have my tons of black peppercorn that came to me from Vietnam. My beans are super garlicky and other spices including cumin and chili pepper.

Yes, plain old dried black beans brought back to life with spices and slow cooking after soaking overnight. Very little fat added. I only cooked a cup dry and it's likely I'll have about eight servings rather than four, and the extra fiber will be awesome.
