John10251's Journal, 26 February 2020

I recently have been trying Kombucha because I have heard a lot of good things about it from some members here. We brought a small bottle and from the health food store and liked it. We then found a larger bottle from Walmart of all places. Both times we purchased the Gingerade versions. We couldn’t help but but to notice that it tasted similar our Sorrel flavored Ginger Beer that we have been brewing for years. Sorrel is a drink commonly drank in Jamaica as a tea. Some people south as of the USA call it Jamaican tea. It is frequently combined in Ginger Beer because of its unique flavor. It is called Ginger Beer because it is allowed to ferment for a period of 3 to 4 weeks. I started checking into how to brew our own Kombucha and to our surprise, we found that it is very similar to the recipe we use to brew Ginger Beer. They both form a scoby that floats on top of the when brewing. This time we added some Kombucha to insure that we get the probiotics found in traditional Kombucha. We think that the probiotics were in the Ginger Beer all the time because they both made a layer of scoby that floats on top similar to all the pictures of Kombucha scoby we found when we Googled it. I don’t know how or why fermented Sorrel/Ginger Beer became so popular in African/Caribbean culture. Jamaica did have a substantial Asian population at one time and it is an island of blended cultures. All I know is that I appreciate the benefits of fermented Sorrel/Ginger tea and here’s the batch we put down tonight…

DO N OK, we usually set ours under the kitchen table away from sunlight. I agree, we do not refrigerate until we filter it and are ready to drink it. Does sitting in darkness help?

I love Sorrel! It's Christmas drink in Jamaica, right? For me it's summery with the tang from the hibiscus, but i love it all year. Haven't thought to make it as a kombucha!

I was disappointed when I went to Walmart today. They only had the small bottles of Gingerade Kombucha at the location I visited. My wife told me she saw a different flavor of the big bottle Kombucha at the Walmart she visited. I'm going to try to get some of that because I have noticed a difference in my digestion.

I visited a different Walmart today and found the larger 48oz bottle of the trilogy flavor Kombucha.

That is really interesting, John! Thanks for sharing. I too have heard so darn much about this kombucha stuff, and I still have never tried. My youngest daughter has digestive troubles... Lots of stomach pain sometimes. Maybe I should see if it would help her.
