1½ Cups Almond Flour
¼ Teaspoons Salt
1 Tablespoon Baking Powder
2 Eggs
⅓ Cups Sour Cream
4 Tablespoons Butter (melted)
⅓ Cups Shredded Cheese (optional)
½ Teaspoons Garlic Powder
Bake at 350°F for as long as it needs it.
I cut back a bit on the baking powder and omit the garlic powder and add extra cheese. A lot extra. The garlic powder is good but it locks it into a savory role. Without, it can go sweet. (butter/cream cheese with low carb jam/honey, etc.). I use a small ice cream scooper to plop them onto the parchment paper covered baking sheet. Makes it easy to calculate stats per biscuit. Have also made hamburger buns with the same recipe using mozzarella and making them a lot bigger and flatter.
I've baked in chopped up pepperoni, hotdog, bacon, brisket, jalapeno - all good! Turns it into a quick self contained meal, great for road trips. Want to get crazy? Use low carb alfredo sauce as gravy to enjoy some pretty gratifying low carb biscuits and gravy!
These aren't as good as real biscuits but are the best substitute I've found. Stop on by, I can whip these up pretty quickly but you better bring some Kerrygold!
