Learning that Insulin directly affects weight gain and that Net Carbs over 20-30g/day keeps a constant flow of insulin in my blood, preventing weight loss was a TOTAL game changer. Removing carbs immediately killed the cravings, first time in my life - 47 years. I have adopted and will follow a Keto WOE (way of eating) always.

Knowing that High Fat foods, such as dairy, have almost no carbs, vs. their Low-Fat Counterparts (evil deception since they have way more carbs and turn on the insulin flow) has allowed me to have whipping cream in my coffee, hunks of Gruyere cheese (not the dice size portion I was once led to believe was the most allowed in a sitting) with not only no guilt, but the blessed SATIATION that fat provides. I am free from the chains of Sugar. This last year I was almost ready to give up, throw in the towel and just accept being huge. As much as I hated myself and went to bed every day full of guilt and disappointment, I really thought there was nothing that could prevent me from buying Ben & Jerry's. I realized this week that all last year, I would wake up and think, "man am I still exhausted, ugh, another full day of work and blah, for what?" Then I would suddenly remember "Hey!! I get to go to Starbucks and have my Latte, and Bacon Gouda Sandwich, Oat Bar, etc...." and it was like a light went off. My happiness and motivation were 100% related to the "drug" being pumped back into my blood, I was addicted to Sugar/Carbs. I am now SO even-keeled. I wake up happy because I know my body is healing. My emotions are stable, I am not sad or elated, I just am. It is a blessing to be in an "even" state.

Dr. Eric Berg and Dr. Jason Fung YouTube Videos changed my life. They are short, smart, motivational and interesting. I know I have a long way to go, but this last 2 months and 30lbs has literally been the most mentally free, easy, peaceful, effortless attempt at losing weight I have ever experienced. So far up to this point I have engaged in zero exercise. I do plan on becoming more active when additional weight is lost. I am particularly interested in resistance training and toning. I wish you all the ease and peace I have found and thank-you for all being here allowing me to share an experience that many others can't relate to or are sick of talking about.

Today's lunch is an example of a simple, perfect Keto meal - High Fat, Low Carb and moderate Protein (anything over 30-40g/meal will stimulate insulin also). It is both delicious and filling/satiating.

Yes SwedishBl I love it. My local grocer has a Vodka Smoked Salmon (this one) that I love!! They also have a Grav Lax, but I find that one way too fishy.

I notice you have pecans. I was surprised to find out pecans were fairly low in carbs, say, compared to peanuts. They are my favorite kind of nut now.

Ah yes! On purpose. I started with a bunch of different nuts - then googled "Dr. Berg Nuts" and Voila a short little video on the Carb Content of nuts. Pecans = Best, Cashews = Not so Good - gave those straight to my husband. Pecans, Macadamia, Walnuts are best. I love Fat Secret, entering my foods and seeing the Carb contents. It can be quite surprising. A few weeks ago, in Germany, I had Schnitzel. I said no to the accompanying potatoes, but really wanted the Schnitzel. Later that night when I entered the option of "Schnitzel - 2 cutlets" I was surprised to see my day hit 40g of Carbs. Yup those little bugger bread crumbs, looking all innocent around my meat... Great education and thank goodness I love salads :)

nuts are great but you need to weigh in grams, they use up your carbs quickly. You have great choices on that plate!

insulin stimulation, the theory is high fat works when insulin is not activated, otherwise it's just a high fat diet. Would like to see the calc. for that plate. Per meal should read per day, unless I am wrong, it happens all the time.

I’ve experienced the same life changing side effects on keto. I never thought it would be possible to not be addicted to food, to stop binge eating. And I had no idea how much carbs affected me. Since being off carbs I dont feel like I’m depressed anymore, lethargic all day, completely scatter brained, or have mood swings (which I never realized I had until going off Keto recently). It’s like some kind of miracle that has improved my life AND helped me lose weight without suffering.
