Ran into a challenge the past couple of days. Our city "peeps" were working on the electrical lines in my neighborhood this week. We were w/o power for 4 hours on Tuesday and for 5 hours on Wednesday. (For this reason, I was not on FS much at all.) Plus, it really wrenched my eating plan -- I did not want to open the fridge and let the chilled air out - so our food would stay fresh. And even if I did get something out to prepare, I could not cook anything up to eat. The only thing that was available to me was the Atkins bars -- I don't eat them usually, except for one tiny bite every now and again. Buy them mostly for Jim b/c they're a healthy snack for him. But, there was nothing else I could eat.

Went out to Applebees for a late lunch and had a fantastic steak/shrimp with brocolli and asked for sauteed mushrooms to replace the starchy potato. Awesome!

Power was still out when I got home so I could not bake the low-carb pound cake to take to church last night. Later, I ended up making an old favorite stand-by b/c the ingredients were in the pantry - way in the back. Made PB and Chocolate Rice Krispy Treats ... and I was not tempted to have one at all!!! I did NOT even lick my fingers!!! They got totally scarfed up and were enjoyed by everyone (who was lucky enough to have some!). A few asked for the recipe, too.

Didn't really have time to eat supper. And during the fellowship time after church, nothing was served that was on my plan...so I visited with everyone and just did without... And I am okay with that! Got home too late to warrant eating anything else except a piece of cheese.

All in all, I think I did well and made something good out of an incovenient situation...

Still stuck - and know I will be now for at least a few more days b/c of those A bars I ate yesterday. :/

@Rhonda- - Hey girl! Thanks for your constant encouragement -- your affirmation and kindness means SO much!! :) I'm happy to share the pound cake recipe with you. Please keep in mind that this recipe is AWESOME and a healthy alternative -- but it is not Induction-friendly. So, it is not something you will want lying around the house to tempt you. I began making this b/c my husband LOVES pound cake and this is a good dessert to make when we have company over - b/c folks love it and it won't kill my progress if I have just one piece. I do not top this with fruit - just heavy whipped cream (for me). I have had several people who've tried it request the recipe b/c it's so yumm-O. LOW CARB POUND CAKE 1/2 cup butter, softened 4 ounces cream cheese, softened 1 cup granular Splenda or equivalent liquid Splenda 5 eggs, room temperature 1 teaspoon lemon extract 1 teaspoon vanilla 6 1/2 ounces almond flour, 1 1/2 cups plus 2 tablespoons 1 teaspoon baking powder Cream the butter, cream cheese and Splenda with an electric mixer. Add the eggs, one at a time; blend in the extracts. Mix the almond flour and baking powder; add to the egg mixture a little at a time. Pour into a greased 9-inch round cake pan. Bake at 350º 50-55 minutes. I suggest checking the cake after 40 minutes or so because mine was done in less than 45 minutes. The cake will be golden brown and firm to the touch when done. Makes 8 servings , Can be frozen With granular Splenda: Per Serving: 346 Calories; 31g Fat; 10g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs With liquid Splenda: Per Serving: 334 Calories; 31g Fat; 10g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs LOAF CAKE VARIATION (This is what I stick with from now on..) Bake in an well-greased 8x4" loaf pan at 325º for 50-55 minutes or until well browned. Place pan on cooling rack and let cool 10 minutes before turning cake out of pan.

Evie, do you know how many cups 6 1/2 oz.'s are??? 1/2? 3/4? 1 cup? etc? I am starting to try to keep track of recipes I might use and save into a Recipe Journal on my computer - but I stink at conversions. Thanks :)

@Paula: (1 1/2 cups plus 2 tablespoons) It is included in the recipe there, but - FS bunches everything up into one tight paragraph -- not the neat little "list" that's in my Word document. So, it is not as easy to interpret... Sorry 'bout that. :)

Ok, but the database here says 1/2 cup = 6g's ??? What does your package say?

No, I'm sorry - it says 1/4 cup = 6g's - which to your recipe noted above ( 1 1/2 cups + 2 tbsp) would equal somewhere around 40g's of carbs just for the almond flour. Is this right...am I missing something?

Thank you, Evie!!!! Perfect timing, too. My daughter's 30th birthday is next week and this will be a nice 'surprise element' to add to the festivities...between this and the LC Cheesecake, I'm gonna have some nay-sayers eating their words (literally! hahaha). I plan to feed some folks an entirely Low Carb, delicious meal without their knowledge - until afterwards, that is! ☺ ☺ ☺

I did not go by the packaging, Paula. I just followed what the recipe says...which is exactly "almond flour - 1 and 1/2 cups plus 2 tablespoons". Hope that helps... Turned out perfectly. :)

Congrats on such a great night of willpower! It's soooo hard, but makes you feel so much better when you've stayed away from the wrong choices. And I want this rice krispie treat recipe..do tell!!!!

@cobby, I feel wickedly bad giving you this recipe, girlfriend. Do I need to pray and ask for forgiveness, or something? I will share it with you but will message it to you. I do not want to be guilty of advocating a non-atkins dessert in an open forum where some dear soul might read it and get tempted to eat it. Last weekend I had that exact dish at Applebys and it was very yummy and it totalled to something like 550 calories which is great! You did wonderful in juggling your day without giving in to temptation Evie and keeping the momentum going! TOWANDA!!!!!!
