Good Morning! Home from work today...not sick, but the office people are painting the suite next to my office, and it stinks!!! so I took the day off!!! I just realized this is the first day home alone since I started my new way of life. And usually by now I woulda had two toasted English muffins (raisin, cinnamon kind) with some lowfat, sugar filled spread, thinking ...wow, what a great breakfast!!!! No fat!!! So, today, it was yummy avocado with tuna and mayo...maybe it sounds wierd, but those are some of my fave foods! I threw all the english muffins into the backyard for the birds!!! Happy to be here, happy to have so much support and buddies. I DID buy the new Atkins book and found a book on low-carb eating as well. I plan on hitting those later in my day, after spending some time in the book of Matthew. My two week induction is ending tomorrow, and I have decided to continue. I am not bored, NEVER hungry, and have no cravings. And it is working. Hubby ok with it, and he does not know it, but he is being fed some low carb meals too. It is good for him. Tonight, pork roast from the crockpot with peppers and onions, and a spinach dish with cheese!!! I have some smoked mozarella I got for Christmas so I will use it up!!! Great job on the losses, your quiet time alone today, and of course - the amazing eating you are talking about. The pork roast sounds yummy.

thank you kmartin and evie! hmmm, the recipe ...I am going to put the roast in the crockpot, slice up onions and a bell pepper, add garlic, black pepper and let it cook on high. I plan to start it at noon and it should be thoroughly cooked by dinner time. Oh, and I will add about 2/3 cup water. Also adding in some cumin...I just love cumin!!! And thats it!!!

Really? That simple? I really don't use my crock pot enough anymore. That is going to change. Just as soon as I get that pork roast from the store. Thanks Rockseer.

My roast is 2.44 pounds. It looked big enough for hubby and me, and then leftovers for lunch tomorrow. So I got lunch covered tomorrow and we having dinner at church. I just LOVE my crockpot and electric skillet. I used to adore my rice cooker, but I am giving her a rest at the moment, lol!!! So grateful for electricity!!

Rockseer, you are doing marvelous...as I sit here typing this I am watching hubby make all kinds of good things for us to eat over the next few days. A nice cream of mushroom soup with clams in it, marinated, grilled pork chops, hamburgers, and a broiled chicken. That will give us plenty of good, lean protein to munch on all weekend. And it is all Atkins friendly. Woot! Enjoy your time with the book of Matthew, and with the Atkin's book.
