My breakfast and lunch meal prep for this week. Veggie egg cups and soup.

3camica3, how do the paper muffin cups work for reheating your eggs? I used to make those, but I wrapped them in plastic or used baggies, seemed to keep them from drying out in the microwave.

gz9gjg I actually use the liners that are made from parchment paper. The parchment liners fall right off after baking so I toss them before storing the egg cups in the refrigerator. I only reheat them for 30 seconds and have not had them dry out. Sometimes I even eat them cold.

eat_little It definitely saves some time through the week. It also helps keep me on track. I just have to say, "Candi, you have food already made at home." Lol

3camica3, I do that, too, while I'm out: "That delicious _____ is just waiting for you ar home!"

Good to hear 3camica3 - mine were bigger, no liners available for giant muffin tins - and I took them to work; reheating took 45 to 60 seconds, so more susceptible to overlooking/ drying out.
