Bit busted after making 20 pounds of meatballs, and 4.5 pound 'non-stop' fish cakes. As we were working together in the kitchen, we joked about keeping the rhythm tight, and routine smart, so we could 'get home' sooner. Home processing of food can be fun. Take a break now, and let them cool. Next is to vacuum seal them into portion packs and freeze them. Makes for easy meals in a carnivore household.

Jenjebba. The recipe is a bit unsettled. Used seven different type of meat, salt, pepper, ginger, onion, cumin, cinnamon and some sauces like authentic soy sauce, oyster sauce, liquid smoke, fish sauce and rice wine. Skimmed dry milk for binder. I weigh the salt to about 2.3% of meat weight, but haven't yet established percentage for the other parts. Well, pepper at about 0.5%. The meats are what I find that looks good, and is affordable, plus a little liver added for nutritional enrichment. This time duck meat is in the higher percentage. They smell really good, joy to eat.

Thank you for the recipe, that's how I cook, the last cook I did I cooked 20 pounds of ground beef, by myself and into the freezer it went. I think I might do that for my next cook , I have all those ingredients . I never thought about putting fish sauce in it! get whatever on sale and stock up . Enjoy some of them for me
