Bummer. Overcooked them. That'll teach me to pay attention while cooking. Used soy sauce, salt, spice and whiskey for flavor. Made tiny patties while adjusting flavor. Left overs from the stuffer made a really good patty. The overcooked sausages lost flavor. Ahh well, next time.

While I remember. 80%Lean 15%Fat 2%Salt 2%SoySause 1%Spice. After mixing I threw in a shot of whiskey. Lots of ice water was then added to make the dough very soft.

FUN! I've been wanting to get the sausage attachment for my Kitchenaid mixer. Granddaughter loves hot dogs but they are full of chemicals and who knows what! I'd love to teach her how easy it can become to make her own with practice

ConiMN To make Hot Dogs, you need one of those food processors, to turn the meat into a smooth paste. Ice water too. I haven't got a food processor, but may pull the trigger on one. Could be fun. Good luck with yours.

ConiMN Forgot. A disc with very small holes for the meat grinder suppose to work too. May try that first, since they are only a few dollars. 😉

Thank you all for your lovely comments. I had an overcooked-accident with this first batch, so there will be some happy dogs in my neighbourhood soon. Trying sun-dried sausages today. Hope to not stuff that up. ☺
