Sausage & Sweet Potato Breakfast Frittata

A mix of sweet and savory flavors in this utterly satisfying breakfast dish.

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Peel and slice sweet potatoes into thin rounds. Slice red pepper. Peel and thinly slice onion.
  3. Melt butter in a 12" non-stick skillet. Add onions, peppers, sausage, sweet potatoes and chives. Cook down for 10 minutes.
  4. Add eggs, cheese and salt/pepper (if desired). Cook on stove-top for an additional 5 minutes.
  5. Finish it in the oven for another 20 minutes until a knife comes out clean.
