Poached Chicken with Gingered Applesauce

Great with the Spiced Couscous.

  1. Sprinkle the chicken with the garlic salt and pepper.
  2. Pour the apple juice into a large non-stick skillet and bring to a boil over medium heat.
  3. Add the chicken and cook for about 5 minutes, or until the meat looks opaque.
  4. In a medium bowl, mix the applesauce, ginger, soy sauce, Chinese 5-spice blend, oil and vinegar.
  5. Remove the cooked chicken from the skillet and place it on serving plates.
  6. Add the applesauce mixture to the pan, mix well with the pan liquid and bring to a boil. Spoon over the chicken. Sprinkle with the cilantro.
  7. Note: recipe from Jeanne Jones' Healthy Cooking.

4 Points Per Serving. I'm not sure that Alton Brown would call this “poached”, strictly speaking, since there really isn't enough apple juice to cook the chicken! I served this with Spiced Couscous, which called for apple cider, so I used it instead of the apple juice. It was delicious!

I also thought it wouldn't be enough liquid, so I added some water with the juice--then had to boil some off before adding the applesauce! Didn't have rice wine vinegar, so I used apple cider vinegar, & didn't have time to chop the ginger root (it was late, & I was making a double recipe to have leftovers), so I just used a heaping teaspoonful of powdered ginger--it was delicious. Served it over plain couscous, with a side of green beans & a salad
