Halibut Piccata

Skillet cooked halibut with wine and capers.

Ingredients

Directions

  1. Heat the oil and butter in a large skillet over medium-high heat.
  2. Season halibut pieces with salt and pepper and dredge in flour.
  3. Fry the halibut until golden brown on both sides and fish flakes easily, about 6-7 minutes total.
  4. Remove from pan and transfer to dinner plates keeping warm.
  5. Return pan to heat; pour wine into the hot empty skillet and use a spatula to scrape any browned bits from the bottom.
  6. Let the wine reduce by half then stir in the garlic and capers.
  7. Let sauce simmer for a minute to blend flavors and then pour sauce over fish and serve.
