Grilled Stuffed Zucchini
Great tasting cheesy zucchini boats.
Ingredients
Directions
- Cut zucchinis in half lengthwise; scoop out pulp, leaving a 1/4" shells.
- Brush with 2 teaspoons oil; set aside. Chop pulp.
- In a large skillet, sauté pulp and onion in remaining oil.
- Add garlic; cook 1 minute longer. Add bread crumbs; cook and stir for 2 minutes or until golden brown.
- Remove from the heat. Stir in the mozzarella cheese, mint and salt.
- Spoon into zucchini shells. Sprinkle with Parmesan cheese.
- Grill covered, over medium heat for 8-10 minutes or until zucchini is tender.
- Note: you can also make them in the oven.

I prepared almost exactly as directed, except that I didn't use mint, and I used 2% shredded mexican cheese instead, and added a few TBS of diced green chiles. I loved these (so did hubby and teenage son), and I will definitely make these again! Could mix up ingredients based on what you have on hand.

Used stuffing instead of bread crumbs and left out the mint. Very tasty!

I ate this with dinner one night and lunch the next day. My boyfriend was not a fan, but it left me with plenty of leftovers!

Great recipe, I used basil instead of mint more garlic, 1/2 teas Italian seasoning, pinch of red pepper flakes and "Panko" bread crumbs, used only 2 teas olive oil to sauté filling and sprayed the zucchini and top of filling with Pam olive oil spray. Baked at 350 till tender. Served as an appetizer with individual 1/4 cup servings of homemade pasta sauce for dipping. This recipe is a keeper.

This was so good! I didn't have any mint so I used fresh basil from the garden, and added extra garlic. I'm going to use this again and again and again. My non-dieting husband loved it, too.
