Creamy Corn Casserole

Simple noodle casserole that's hearty and delicious.

Directions

  1. In a bowl, combine all of the ingredients, except for the crackers and margarine, then poor it into a greased 1-qt. baking dish.
  2. Toss cracker crumbs and butter; sprinkle over the top.
  3. Bake uncovered, at 350 °F (175 °C) for 45-50 minutes or until heated though.

I doubled everything in this except for the corn the last time i made this so it was not as corny. I also put in more cheese and added some chicken. My husband ate half of a cake pan of it.

I went by what NickyLynn said and I am glad I did. This meal has a great basis but incomplete. I doubled the cheese, used 4 oz noodles (egg free), used 1 can of Del Monte creamed corn, 2/3 cup frozen whole kernel corn, no saltines and no butter. Cut up one Perdue Perfect Portion Chicken Breast Fillet (bite-sized pieces). I topped the dish with 1/3 cup bread crumbs. The recipe didn't state it, but I par-cooked the noodles for about 3 minutes on a rapid boil. Drained then mixed with other ingredients. Used no salt, upped the pepper to 1/2 tsp for snap and baked for 35 minutes. Now... this recipe is delicious. Could use even more cheese, but am trying to keep calories, etc. down. Very nice. Will definitely make again.
