Oatmeal sure spiked my blood sugar!
SonnyMac, I just read this whole thread. Great investigating you've been doing. I wasn't able to see your link as you have it set for friends only, so I don't have that information regarding what I'm about to say. Here is my thought: Oatmeal is primarily carbs. If all you have for breakfast is coffee and oatmeal, there is no balance. I'm wondering if you would have the spikes if 1) you have half the oatmeal and replace the other half with a protein, such as an egg, or 2) you do the 45 min of exercise before breakfast so that your body is using more energy as your eating. Just thinking out loud.
