How Often Do you weigh yourself?
Eeeeevery day however i only record my weekly weigh in on sunday morning. Keeps me on top of it.

The (lack of) importantce of breakfast...
I started about 4 weeks ago, i skip breakfast as i have to take thyroid medication and i like to leave it a good three hours before i eat. I dont find myself overeating for the rest of the day and have dropped 10lbs (water weight but last week still lost 2lbs)

Recommended Daily Intake (RDI) Is Fatsecret recommendation accurate?
Seemed a bit high to me too, just set my own calories at 1300.

Calorie Counts
Digital scales!!! I weigh everything, even my milk is measured and put in a flask every morning for my calorie allowance. Mainly eat home cooked food but i have noticed that when buying things like bread etc the weight in grams doesn't actually add up to the weight of the item as noted on the packet. It may seem a bit much but i've lost 10lbs in 4 weeks and if i stall at least i'll know i'm on track with the cals! As sherota says i use the recipe book as well to tot up cals per serving. Really useful tool.
