How Often Do you weigh yourself?
I weight myself every Monday and Friday morning, when I first get up. Monday because it's the beginning of the work week and Friday because it's the beginning of the weekend. If I've lost, I'm encouraged to keep going. If it's up, I'm encouraged to work harder!

I NEED YOUR INPUT PLEAAAASSEEE!!!
I eat these quite a bit - at least once or twice every couple of weeks. I usually make some sort of marinara sauce with seitan or textured vegetable protein and then pour it over the noodles. They are much better if you rinse them well and then steam them for about five minutes before eating. They don't taste like real pasta, but they are good, in my opinion. Just like with a lot of new foods, you just have to get used to them. Good luck!

Who is following your own healthy lifestyle plan?
Atkins works, but only temporarily. I lost 25 pounds a few years ago, only to re-gain that plus five or six more. Eating right and exercising are the only way to lose weight and keep it off.
