Still hanging in there. Experimenting in the kitchen since wifey is staying with friends for a while. Been doing more bike riding than swimming or strength training, but that should change here pretty soon. At least I can wear my 2X shirts again. :)

Finally I broke through! I have been at that 260.2 weight it seemed like forever. Not a big fan of plateaus. I did made my goal weight of 260 on the 9th of April, but it may be a little tougher to reach my goal of 250 on the 9th of May. However, I am going to give it a heck of a shot. For those who still enjoy a good burger now and then, I did finally find a plant based burger that really tastes good - I compare it to Burger King’s Impossible Whopper. Believe me, I have tried some nasty plant based burgers, but this burger and a little all purpose seasoning on a whole wheat bun makes for a very good alternative to red meat. Onward and Downward! Toodles!

Almost breaking out of the 60’s and hitting that 25 pound mark! I will have to get me a big ole banana split to celebrate! NOT! Haha, that’s the old me; Maybe a plain low fat yogurt with vanilla flavoring, and a 1/4 cup of granola. I hope everyone is having a great day. Toodles!

It may not look all that appealing, but it was pretty good. Roasted Brussels sprouts and potatoes with navy beans topped with Parmesan cheese. The beans go in the pan 10 minutes before the other stuff is done (probably just to add some protein). From the flexitarian Cookbook.

I seem to be at a plateau now. You’ve got to love those things. Had meatloaf, baked potato w/butter, and Brussels sprouts last night. That ought to be enough to break the spell. It was delicious anyway. That makes red meat about twice in three weeks. You have no idea how big a change that is for me! Toodles!
