Porotos Granados

Traditionele Chileense stoofpot van pompoen en bonen. Heerlijk stevig en verwarmend en, zoals bij veel van zulke gerechten, nog beter als je de soep de volgende dag opwarmt.

  1. Verhit de olie in een grote pan of braadpan op middelhoog vuur. Doe de ui en knoflook erbij en fruit 10 minuten zachtjes. Voeg het paprikapoeder (1 tl.) en 1 tl. van de oregano toe en bak een minuutje mee.
  2. Voeg de uitgelekte en afgespoelde bonen, de pompoen, het LAURIERBLAD en de bouillon tegelijkertijd toe, en laat sudderen tot de pompoen net gaar is, 10-15 minuten. Voeg dan de sperziebonen en maiskorrels toe en laat nog 5 minuten zacht koken.
  3. Breng goed op smaak met zout en peper. Roer de rest van de oregano erdoor, laat een paar minuten rusten en dien dan op.
