Judias Pintas con Chorizo

Unas ricas judías cocidas con chorizo y verduras.

  1. La noche anterior, se ponen en remojo las judías pintas con agua y sal. Se ponen a cocer las judías pintas en una olla con agua fria, junto con la oreja cortada en trozos, el chorizo, el codillo, el pimiento verde, el tomate cortado en cuadraditos, y el ajo.
  2. Se sofríe la cebolla en una sarten con un poco de aceite y cuando esté dorada, se agrega una cucharada de harina y otra de pimentón dulce, removiendo ligeramente para que no se peguen.
  3. Una vez ligado, se añade la salsa de tomate.
  4. Se incorpora a la olla el sofrito, justo antes de que las judías terminen de cocer unos treinta minutos mas o menos, luego se deja cocer otros diez minutos para que el sofrito de sabor al guiso. Para que las judías pintas queden tiernas es mejor utilizar agua mineral para la cocción de este plato.
