Good morning! Sorry I didn't get on here yesterday - just one of those busy days. Will start recording my food again today - don't ever want to get out of that habit.

DH's leg is much better - thank you all again for your concern.

As for meals, I've got a pork roast in the oven and am cooking some rutabaga to go with it. Sorry, it isn't anything new and exciting but I haven't had it in a while, so under the circumstances I'm counting it as new. Got boiled eggs and prepped raw veggies to go with next week's lunches.

Woo Hoo...happy day, I am going to be slow cooking this afternoon too, beef roast though! And organizing so the work week goes smoother. Holidays are OVER...time to get on with the basics of life!

Yum-o pork roast! It is great having something healthy to eat ... Too easy just to grab something unhealthy. Glad to hear DH is better. Makes life so much easier when you prep for the week's lunches. I'm going to do that today too. Hope you enjoyed your fabulous dinner!

Helewis - I peel, cube & boil them, them mash them with butter, salt & pepper. We love them!

Sounds great. I'm always looking for someone to peel those root veggies for me. My latest thing is peeled and cut calabaza and other squash from th Amish market near me.
