I want a delicious and healthy vegan breakfast option. One that is not processed. But I'm sick of fruit for breakfast. I miss my poptarts! Is there anything out there that is closer to a poptart than fruit, but is still not processed? I am going to whole foods tonight, so it's possible that I will find something simular to poptarts that's vegan, but it will probably be processed. Oh, well. I think that I need a good transition food. I am starting to despise my vegan breakfast of choice: fruit with nuts or seeds. This morning was an orange and a tablespoon of pumpkin seeds. Blech.

Today's lunch is going to stress me out. My boyfriend's car broke down yesterday, so I let him borrow mine to go file his taxes. So he dropped me off at work this morning and will pick me up at lunchtime. Not to go eat, but to go pick up his car. I'm really not looking forward to it. Lunch is usually when I relax and regroup for the second half of my workday. Oh, and it's usually when I eat something. Lately, that something has to be healthy and vegan.

My first thought was, "Oh, Stacey (my boyfriend) can make me a PB&J and bring it with him! But then I remembered that he is out doing his taxes right now, and will come straight from there to here. We will likely be stopping at Taco Bell or Wendy's, or somewhere else that I don't want to go for lunch. :-( Also, there is no time to sit down and eat, which really stresses me out. There is no time because Stacey's car is downtown Memphis (somewhere near Graceland/worst part of town) which is about as far away from my job as you can get without leaving Memphis. :-( So it will take my entire lunch hour to do this errand.

I am on a vegan diet and for breakfast I actually fry up some tofu like i would scrambled eggs....with the right seasoning its quite good!!

Let us know what you decide upon. I'm still very much in the fruit mode and have no problem having Brussels sprouts for breakfast or any other vegetable for that matter; but, I'm curious to see what you come up with. Have a good day GG. :-)

Taco Bell has a bean burrito that Alicia ok'd...Remember, the key is not to make it stressful...just try to make the best possible choices you can based on what is available... her example: 7eleven = apple juice and sunflower seeds!

Yeah, I've been having veg and grain salads or bean salads for breakfasts. Not quite like a pop tart but it starts me off on the right foot. I do find the saying true about breakfast setting the tone for the day. When I eat something sweet and carby to start off I struggle through the day. You could make a batch of muffins in the beginning of the week and freeze what you won't use? They do thaw/heat nicely.
