Meatballs were husband and kid approved. Yay! So recipe is being posted. I could eat 10 of them and only have 3.1 carbs. I was making this for dinner tonight and for a party Sunday so it makes about 60 meatballs at 0.31 net carbs each. Hubby and son also asked to make them again so this one is a win for me. We ate the ones the cheese started coming out of.


2lbs ground beef

1lb mild sausage (loose meat)

1/4 cup golden flaxseed meal

1 egg

2 tsp Italian seasoning

2 TBSP Worcestershire sauce

2 TBSP Maggi seasoning (optional, not everyone can find it)

1/2 cup Parmesan cheese - shredded, jar kind is fine

3 TBSP chopped fresh parsley

1/4 cup finely diced onion

2 tsp crushed garlic

8 string cheese sticks

Mix everything but the meat and string cheese. Mix in meat, do not overmix/overwork. Cut the string cheese into about 60 pieces. Preheat oven to 350. Take about a 1" ball of mix and insert a piece of cheese and make sure it's thoroughly covered. Repeat until meat is gone. Bake at 350 for about 20 minutes.

I don't enter my recipes to be approved because you can't edit them later and I like to change things up. :-)

I just make a new one up to put in my cookbook for I ones I submit. I don't submit most of my recipes just ones I think other people will like enough to make more than once, or common ones that don't have the recipe listed. Hubby told me not to tell anyone they were low carb because he wants to tell them. LOL, that's a change.

How many calories in a serving? what's a serving size?

1 meatball is a serving but for dinner I ate 5. It's on my food log, you can check to see the stats. They are kind of high in calories at around 100 calories each. But some "normal meatballs are 240 calories for 3 so it's not out of the realm. Probably because these are stuffed with cheese they are higher.
